Century Egg Porridge
Ingredients
Rice porridge
- 2 tsp avocado oil
- 1 whole shallot chopped
- 1 whole medium ginger jullienned
- 3 stalks green onion chopped
- 6 whole century eggs chopped
- 2 cups white rice washed
- 6 cups water
- 4 cups chicken bone broth
- 2 tbsp fish sauce
- fried garlic optional
- fried shallot optional
- white pepper optional
Marinated ground chicken
- 16 oz ground chicken
- 1 tbsp fish sauce
- 2 tbsp green onion whites
Instructions
- Marinade ground chicken with fish sauce and green onion whites and set aside.
- To large pot or dutch oven pot, avocado oil, ginger, shallot, and the remaining green onion whites
- Sautee ginger, shallot, and green onion whites until fragrant.
- Add washed rice to pot and cover with chicken bone broth and water.
- After 10 mins of the rice cooking, add ground chicken to the pot. Break up the ground chicken with a spatula until the ground chicken is bite size pieces.
- Add century eggs and mix.
- Add fish sauce and serve.
- Garnish with green onion, fried garlic, shallots, and white pepper.
