Hainanese Chicken Rice
Ingredients
Chicken and Rice
- 1 tsp oil any
- 2 knobs ginger medium
- 5 cloves garlic
- 2 stalks green onion
- 2 cups white rice
- 1 tsp tumeric powder
- 2 chicken thigh
- 2 chicken drumstick
- 2 tsp kosher salt
- 1 carton chicken bone broth 32 oz
Scallion Ginger Sauce
- 2 tbsp green onion/scallion finely chopped
- 2 tsp ginger finely grated
- 1 tsp salt
- 2 tbsp neutral oil
Instructions
- Salt chicken thighs and drumsticks and let it sit for 20-30 minutes.
- Preheat rice cooker on the sautee setting.
- Thinly slice ginger, mince garlic and chop green onions into 3 inch long pieces.
- To the rice cooker, add oil and ginger, minced garlic, green onion, and salt. Saute until fragrant.
- Add washed white rice and add tumeric. Mixed until the rice is fully coated.
- Add 32 oz of chicken bone broth to the rice mixture.
- Wash chicken thighs and drumsticks under cold water. Add chicken thighs and drumsticks into the rice cooker. Enjoy once rice is ready. Optional, add a side of your favorite veg or pickles!
Sauce preparation
- Add finely chopped green onion, ginger, and salt to heat safe bowl.
- Heat oil until slight smoke appears
- Pour hot oil to green onion, ginger, and salt mixture. Be careful of oil splatters.
