Century Egg Porridge

Rice porridge

  • 2 tsp avocado oil
  • 1 whole shallot chopped
  • 1 whole medium ginger jullienned
  • 3 stalks green onion chopped
  • 6 whole century eggs chopped
  • 2 cups white rice washed
  • 6 cups water
  • 4 cups chicken bone broth
  • 2 tbsp fish sauce
  • fried garlic optional
  • fried shallot optional
  • white pepper optional

Marinated ground chicken

  • 16 oz ground chicken
  • 1 tbsp fish sauce
  • 2 tbsp green onion whites


  • Marinade ground chicken with fish sauce and green onion whites and set aside.
  • To large pot or dutch oven pot, avocado oil, ginger, shallot, and the remaining green onion whites
  • Sautee ginger, shallot, and green onion whites until fragrant.
  • Add washed rice to pot and cover with chicken bone broth and water.
  • After 10 mins of the rice cooking, add ground chicken to the pot. Break up the ground chicken with a spatula until the ground chicken is bite size pieces.
  • Add century eggs and mix.
  • Add fish sauce and serve.
  • Garnish with green onion, fried garlic, shallots, and white pepper.
